Beef and bacon skewers

 

700g BBQ blade steak

1 clove garlic, crushed

1 tablespoon wholegrain mustard

1/4 cup olive oil

1 teaspoon thyme leaves

175g slices rindless bacon

250g Flavorite cherry tomatoes

Salt and cracked black pepper

Simple salad to serve

Soak 12 bamboo skewers in water and set aside for 15 minutes. Meanwhile, cut the steak into 2cm pieces. Place the garlic, mustard, oil, thyme, salt and pepper in a large non-metallic bowl and mix to combine.

Add the steak and set aside for 15 minutes. Cut each slice of bacon lengthways into 2 strips. Remove the skewers from the water and drain the steak from the marinade.

Thread a piece of steak onto a skewer, then a strip of bacon folded in half and a whole cherry tomato. Repeat alternating the ingredients on the other skewers.

Heat a barbecue or stove top grill over medium-high heat. Cook the skewers, turning, for 3-5 minutes until browned and cooked to your liking.

Remove from the heat and serve immediately with a simple salad.
